Show the Day of the Week next to dates whenever possible

On the booking, quote or Inquiry pages show the day of the week. This saves having to open a calendar app to show the day of week.
Example:
Quote: Betty Boop at Captain Morse House
Quote # ORQ2964621
Arriving Aug 14, 2022 and departing Aug 20, 2022 (6 nights)
Would show instead
Arriving Sunday, Aug 14, 2022 and departing Saturday, Aug 20, 2022 (6 nights)
