I would like to be able to automatically tag guest after they depart automatically.

This week's release included some new conditions for New or Repeat Guest. It doesn't tag the guest automatically on departure, but it does allow you to configure a Tag Automation so if the system sees that the same guest is booking again, it will tag them as a repeat guest at that point.
You can add Conditions > Guests > Guest Type is > Repeat Guest to your messaging Trigger or Tag automation, like so:
Note that Repeat Guests are not limited by property, meaning that the Conditions > Guest Type is > Repeat Guest works even if your guest has previously booked another of your properties. As long as the system was able to find a match, setting up a Tag and corresponding Tag Automation, I believe, would be what you're looking for.
